In a large pot boil tongue for 2-3 hours
or until skin begins to bubble. Peel outer layer from
tongue. Slice into 1/2" thick slices.
Sauce:
Combine brown sugar, flour, salt, and
cold water in saucepan and bring to a boil. Remove from
heat and add orange juice, lemon juice, and raisins. Stir
until combined.
To Bake:
Pour sauce over sliced tongue and bake
in a 350 degree oven for 25 minutes.
To Grill:
Grill sliced tongue 3 minutes per side
and pour sauce over slices when removed.
